Job Description Summary

Under the general direction of the Campus Dining Director, the Registered Dietitian & Sustainability Coordinator (RDSC) is responsible for establishing and communicating the nutritional philosophy and programs for Campus Dining Services. The RDSC provides nutritional education to staff, students and student groups, oversees the implementation and maintenance of comprehensive nutrition and wellness tools, and supports the culinary team to uphold standards in these areas. The RDSC acts as the advocate for nutrition, wellness and culinary trends, and contributes Quality Assurance management within the dining program.

The RDSC advances Campus Dining (CD) and Cal Poly Corporation’s (CPC) efforts as a sustainability leader on campus by working with management, campus staff, and students to develop and maintain sustainable practices in strategic planning efforts and daily operations. Works with other CD staff to research and implement facility, vehicle, and waste stream sustainability and communicate these efforts on behalf of CD.

Minimum Qualifications

Bachelor’s degree in Food Science, Nutrition, and/or Dietetics or related field from an accredited college/university

Credentialed as a Registered Dietitian in accordance with the Commission on Dietetic Registration (CDR)

Must be ServSafe® Certified and maintain certification

Minimum of two years of work experience as a Registered Dietitian

Knowledge of food and catering trends with a focus on wellness, healthier lifestyle, and sustainability qualifiers per AASHE standards and recommendations. Knowledge of all applicable local, state, and federal laws and regulatory statutes and guidelines pertaining to food service

Ability to perform complex, highly responsible and confidential duties

Excellent computer skills including Microsoft Word and Excel

Ability to prioritize, plan, organize, and meet deadlines

Ability to establish and maintain cooperative and effective working relationship with others

Excellent verbal and written skills and the ability to interface with all levels of staff and Board of Directors, as well as the university community, including students, faculty, and the public

Interpersonal skills using tact, patience, and courtesy

Ability to maintain regular and reliable attendance

Possession of a valid California Driver’s License and satisfactory driving record

Strong supervisory, leadership, management and coaching skills

A background check is required for all regular benefited positions.

Typical Essential Functions

Develop, direct, and implement the nutrition and wellness program for CD services

Establish and communicate the nutrition and wellness program for CD services and provide nutritional education to staff, students, and student groups

Serve as the primary administrator and analyst for menu and nutritional software and dining systems programs, such as Food Management System (FMS) or Webtrition

Provide support to the culinary team in all units to ensure that daily output production, nutritional information /labeling, and service adhere to recipe and nutritional standards

Participate in the menu and concept development process and work jointly with the culinary team to yield nutritionally sound and balanced options on campus, and in accordance with customer’s needs, including, but not limited to, allergens, vegan and vegetarian options, sustainability and environmental factors

Be the advocate on wellness and culinary trends and update the CD team during meetings and presentations

Develop, direct, and implement strategic initiatives to continuously drive improvement in regards to nutrition, culinary, and consumer trends. These initiatives may apply to several commodities such as beverages, food, snacks, desserts, and other menu choices while promoting a healthier lifestyle and overall wellness

Manage and implement/uphold dietary standards, training and HACCP plan in regards to securing and renewing the “Great Kitchen gluten free” bi-annual certification

Verify website content for accuracy in regards to nutritional information and current offerings

Review meal plan menu items and meal equivalency to ensure accuracy of dining services’ nutritional goals

Quality Assurance: perform Food Safety and Wellness audits and manage corrective action plans. Participate in food safety trainings and manage the “Serve safe” certification process for CD

Ensure web-based sites and department documents have accurate and up-to-date menus and nutrition information on a variety of environmental and health-related topics

Collaborate and maintain productive work relationships with other university departments such as Health Services, Environmental Health and Safety, etc.

Initiate, coordinate, and supervise planning committees for educational activities and workshops related to health and safety issues including Nutrition Week, Sustainability Week, and other special programs

Serve as supervisor/advisor for student internship programs working in conjunction with faculty

Serve as a key participant on the Student Dining Committee

Maintain current registered dietitian status and keep up-to-date with professional education

Coordinate and communicate CD sustainability efforts with a focus on food procurement practices, student and campus outreach, marketing, and communication. Represent CD in sustainability related meetings and programs

Track sustainable food sourcing for all dining operations detailing the percentage of sustainable food purchased by category and sustainability criteria. Complete AASHE submission form data when applicable

Work with CD management to identify strategic initiatives, set organizational goals, and work toward the CSU sustainability goals

Perform other duties and participate in other CD projects as assigned
